The process itself is therapeutic—the careful measuring of ingredients, the rhythmic stirring, the warmth of the oven humming in the background. And when the cake in question is a White Chocolate Mud Cake, the anticipation only grows.

Growing up, I always loved watching my grandmother bake. She had a way of turning the simplest ingredients into something magical. Her cakes were always tender, moist, and filled with love. While she mostly worked with dark chocolate, I remember the first time she experimented with white chocolate. The result was unlike anything I had tasted before—a smooth, creamy, and slightly caramelized flavor that instantly became my favorite. Inspired by those cherished memories, I set out to recreate that same feeling in my own kitchen.

Why You’ll Fall in Love with This Cake:
  • Ultra-Moist and Velvety Texture – The combination of butter, milk, and melted white chocolate ensures an incredibly tender crumb.
  • A Perfect Balance of Sweetness – White chocolate lends a delicate, buttery sweetness that’s complemented by the slight tanginess of the cream cheese ganache.
  • Elegant Yet Simple – This cake is sophisticated enough for special occasions but easy enough to make any day of the week.
  • Pairs Beautifully with Fresh Fruit – The subtle vanilla and white chocolate flavors work harmoniously with strawberries, raspberries, or even a hint of citrus zest.
Whether you’re baking for a birthday, a cozy weekend, or just because you deserve a little indulgence, this cake is the perfect choice. So, let’s dive into the step-by-step guide to making this stunning cake!

Ingredients:

For the Cake:
  • 9 oz (250 g) unsalted butter

  • 7 oz (200 g) good-quality white chocolate

  • 1 cup (200 g) granulated sugar

  • 2 tsp (10 g) vanilla sugar

  • 3/4 cup (200 ml) milk

  • 1 1/4 cups (150 g) all-purpose flour

  • 3 tsp (12 g) baking powder

  • 2.5 oz (70 g) vanilla pudding powder

  • 1/4 tsp salt

  • 3 medium eggs

For the Ganache:
  • 6.5 oz (180 g) good-quality white chocolate, finely chopped

  • 2/3 cup (140 ml) heavy cream

  • 4 oz (110 g) cream cheese (Philadelphia preferred)

Optional for Serving:
  • Fresh strawberries or other seasonal fruits

Instructions:

1.Prepare the Cake Batter
  1. Line the Pan: Line the bottom and sides of a 9-inch (23 cm) springform pan with parchment paper to prevent sticking.
  2. Melt the Chocolate Mixture: In a medium saucepan over medium heat, combine butter, white chocolate, granulated sugar, vanilla sugar, and milk. Stir occasionally until everything is completely melted and smooth. Pour the mixture into a large bowl and let it cool for about 15 minutes.
2. Preheat the Oven
  1. Preheat to 275°F (140°C) if using a fan, or 320°F (160°C) without a fan. This ensures a slow and even bake, preventing over-browning.
3. Mix the Dry Ingredients
  1. In a separate bowl, whisk together flour, baking powder, vanilla pudding powder, and salt.
4. Combine Wet and Dry Ingredients
  1. Once the butter mixture has cooled, gradually add the eggs, mixing well after each addition.
  2. Slowly fold in the dry ingredients in 4–5 additions, stirring gently until the batter is smooth and well incorporated.
5. Bake the Cake
  1. Pour the batter into the prepared pan and bake for about 70 minutes, or until the top turns a light golden brown.
  2. Important Tip: The toothpick test won’t work for this cake, as it is meant to be dense and moist. Instead, check if the center is set and the edges slightly pull away from the pan.
  3. Let the cake cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely.
Make White Chocolate Ganache
  1. In a small saucepan, heat the heavy cream over medium heat until it’s hot but not boiling.
  2. Pour the hot cream over the chopped white chocolate, ensuring all the chocolate is covered.
  3. Let the mixture sit for 2 minutes, then stir until smooth and glossy.
  4. Allow the ganache to cool for 10 minutes.
  5. Once the ganache has slightly cooled, add the cream cheese and beat until fully combined and creamy.
  6. Spread the ganache evenly over the cooled cake.
  7. Refrigerate the cake for a few hours before serving to let the flavors develop.

Serving Suggestions
  • Garnish with Fresh Fruit – White chocolate pairs beautifully with berries! Top your cake with strawberries, raspberries, or blueberries.
  • Add White Chocolate Shavings – If you want to elevate the presentation, garnish with white chocolate curls.
  • Drizzle with Berry Sauce – A raspberry or strawberry coulis makes a stunning contrast against the creamy white chocolate.

Bake along with me and create a dessert that will fill your home with warmth and sweetness. Let me know how it turns out—I’d love to hear your thoughts!
